Biscuits & Gravy

I baked some spelt biscuits this morning and packed them with a thermos of hot gravy filled with chunks of seitan. Pour the hot gravy over the biscuits for a warm, filling lunch. Some peas & corn on the side, with a little clementine mandarin and an organic strawberry fruit leather for dessert.
Verdict: Messy, but tasty on a cold December day. He ate everything but the clementine, which he saved for after school. I found these organic fruit leather at Target, of all places. 4 stars.

I'm a huge fan of Fruit Leather/Organic Fruit Leather! I get them at a local herb store. They run about 55 cents a piece here. I just might have to repost that one today! Thanks for the reminder!

Gravy looks great! I'm also interested in the contents of the gravy but understand if you cannot say due to your upcoming book.

Jennifer, I've been in love with this blog and now what do I see but gravy! Since going vegetarian 8 months ago, that is one of the few things that I miss.

What recipe for seitan do you follow? I'm wanting to try it, but admit I'm a little scared. Ha. :) Any tips? Oh, and where do I get that special flour? Thanks!

Ah, the seitan! This is my third seitan pot roast in two weeks (boy am I sick of seitan), and I *finally* have a beefy, juicy, completely soy-free pot roast that I'm proud of (I wanted a soy-free meat analogue for those with soy allergies).

Hi, xan's mama (what a cute picture!) -- You can find "vital wheat gluten" for making homemade seitan at health food stores; I usually get mine in the bulk bins. You can find some good recipes online and in cookbooks, esp. Bryanna Clark Grogan's cookbooks.

That gravy is the best part of making pot roast! It's the broth used to simmer the seitan, blended in the blender. It has all sorts of yummy stuff in it -- mushrooms, onions, celery, fresh thyme, beef-flavored bullion, etc.

Hi, l2 -- I've thought about posting an "after" picture, too, but it's pretty scary!! My son is not known for his delicate table manners. In fact, the other day at dinner he started shoveling his vegetables in with his hand and I admonished him to use a fork. Then I thought for a minute and asked, "Is that how you eat your veggies at school?" "Yep!" he nodded. Sigh.

I come across a lot of people who say it's too hard to go vegetarian/vegan. Lightbulb idea!! I'll direct them to this blog (and future book) full of simple alternative ideas for the average meat eater.

Soy-free meat analogue!@#!@ I'm a vegetarian who has cut dairy and soy from my diet due to my nursling's sensitivities and can't wait to see this recipe. I hope your book comes out soon!

I love the whole biscuits & gravy idea.. I've eaten one or the other but never at the same time.. it's sad. And I didn't know spelt baked goods could look so good! I'm trying to eat less wheat myself.. I get way too much of it :S

I love these recipe. I think you are proof that vegan doesn't have to be boring.

I love spelt flour too. My mom is allergic to wheat and spelt is the closest thing to it when cooking her favorite foods.
