Can it really be August already?

Today Disease-Proof blog is reminding me that it's almost time for back-to-school with their post on Packing A Lunch For School.

We're going to have to give that Hot Russian Dressing a try.

Almost? School started here today. All I can say is woohoo! My (very bored) daughter was so excited to go back to school that she got up at 4:30 and made her own lunch before I even woke up. :-)

mine doesn't start for another 2 or 3 weeks so i'm excited... but i actually have a question... i found this really great recipe for vegan chocolate mousse... the thing is it calls for tofu... the thing is i really do not like tofu... i try to avoid anything with the word curd in it as a life rule... but could i use a subsitute instead like soy ice cream or something?

here's the recipe in case you need to know...

Bittersweet Chocolate Mousse à l'Orange

1/2 cup sugar
7 tablespoons unsweetened cocoa
2 tablespoons Grand Marnier (orange-flavored liqueur)
1 teaspoon grated orange rind
1/2 teaspoon vanilla extract
Dash of salt
2 (12.3-ounce) packages reduced-fat silken tofu, drained
3 ounces bittersweet chocolate, chopped
3 oranges, peeled and sectioned

Combine the first 7 ingredients in a blender or food processor; process mixture until smooth.
Place chopped chocolate in a small microwave-safe bowl. Microwave at HIGH 1 minute or until almost melted; stir until smooth. Add chocolate to tofu mixture; process until smooth.

Divide orange sections evenly among 6 bowls or parfait glasses; top each serving with 1/2 cup mousse. Cover and chill at least 1 hour.

i am a very regular reader of your blog and i used to visit it everyday . i get inspiration to make a great tiffin for my son after reading your blog
pls continue writing on the tiffin boxes that you used to as they were really interesting.
or why dont you write what you cook for shmoo at home so that we can inspiration from that too.

i know you won't believe me, but you'll never know there's tofu in that mousse. silken tofu just blends right into things (it's not curdy like the firm, block kind), plus with all that chocolate, etc... any hint of beany flavor will disappear.

My DD is also looking forward to school- and we don't start for almost a month yet. We got her a laptop lunchbox, and she can't wait to use it.

As a note to alyse- it is very true, I promise you will not identify the tofu. I loathe tofu. I cannot eat it in any shape ot form. Except in mousse. I've made that orange mousse, and one other chocolate tofu mousse- and they are both fantastic. The tofu is there for more structure than anything.

Hi Jennifer!
I have a question about the Hot Russian Dressing and another that you mentioned. Each uses an ingredient that I'm surprised to find in a Furhman-friendly recipe. The Hot Russian Dressing has *ketchup* which is very processed and has sugar and salt and the other dressing had orange juice as a main ingredient- very high is sugar although it is a fruit. I feel a disconnect here between what Dr Furhman is teaching and recommending and what I see in his recipes. I am trying, like you, to eat better, but I'm really confused about this! PS Again- I love your blog esp the lunches but also the other tidbits that you include! :)

Hi, Cheryl -- that's a great question! Turns out you can buy Westbrae No-Salt Fruit Sweetened Catsup and Westbrae Unsweetened UnKetchup (contains salt, though) at health food stores. Here's the website:

Re. the orange juice, I think Dr. Fuhrman has said he's not opposed to fresh juices used in moderation. There's such a small amount in something like the dressing, but you can always leave it out and just use the whole orange (I've done it and it turned out fine).

It does help :)- I really want to try the dressing with the orange juice- I can't remember the name but you posted it earlier. Now I can with a clearer conscience. Thanks for helping my understanding of ETL as well!!And thanks for the links to the ketchups- I think I might try tomato paste and a bit of maple syrup.

We use the Westbrae FJS Catsup and like it a lot.

Won't the pita sandwiches which Dr. Fuhrmen refers to be very soggy by lunch time? I may try some of them for DH and put the dressing in the little container but I'd think lining the pita with dressing would be soggy.

Hey I wonder if his Russian Dressing would work cold for DH's beloved 1,000 Island Dressing which I currently make with FJS Catsup, nayonaise, lemon juice and chopped pickles. What'ya think?

I love how people have created (or accepted) this new thing called "back to school." Just one more excuse to get people to buy things. Or am I the only one who feels this way?

When I was a kid (not all that long ago) it wasnt back to school (where you had to get a new computer, new backpack with matching shoes, roller blades, a graphing calculator...) it was get some pencils and a meade compo book.
