Tennessee Corn Pone Muffin

A lunch inspired by my favorite cuisine: southern cooking! A savory cornmeal and black bean muffin with vegan ham cut-outs on the side, lite canned pears, creamy sweet potato, and two Golden Oreos.
Verdict: "I looove those beans!" says Little shmoo. He ate everything but most of the sweet potatoes. We're still working on sweet potatoes! 4 stars.

    As much as I love sweet potatoes, they do look a bit like baby poo when pureed or mashed (-:

    I love sweet potato anything. But only since I turned 25. Before that I hated it no matter how it was prepared.

    I've been loving these lunchboxes, and that cornmeal and black bean muffin looks to die for. Are the black beans actually in the muffin or just on top? Either way, seems delicious.

  10. Hi, birch mom! I know, peaches would have been the perfect fruit. I would have put in canned peaches but Little shmoo doesn't like peaches right now (tomorrow may be a different story, lol!).

    And hi, christina! The beans are spooned into the middle of the muffin batter and the muffin bakes up around it.

    You're cool, Shmoo! I'm so happy to see the corn pone recipe translated to a portable muffin! I tried your "big" tenessee corn pone recipe last week (I mixed pinto beans with spicy black bean corn salsa and some leftover black bean dip) and my omni family is STILL raving! Topped it with a little tofutti sour cream blended with cilantro. My husband is a chef, girl, and he hoovered it! Thanks for the recipes!

    What ways have you tried to feed Schmoo the sweet taters? I LOVED them as a child but I don't think I would have really liked them pureed. I would have liked them baked, then sliced and sauteed in a pan like homefries until slightly brown on each side with some sauce to dip them in.
