Triple-Decker Corn Thins

Triple-decker almond butter and peach jam sandwiches on Multigrain Corn Thins (I cut the corn thins in half with a sharp knife before assembling, so they would fit in the lunch box). Cherry soy yogurt topped with frozen blueberries and cherries in the large lidded container, and some green peas, baby carrots, and celery sticks. A maze is wrapped around the spoons (two to prevent "dirty spoon whining", one for the yogurt, one for the peas) for fun.
Verdict: A quick, simple lunch on a busy Monday. We like these little corn thins from the health food store; they're like rice cakes. Everything was gone but most of the celery, and I do mean everything -- he left half the empty containers in his desk at school! Luckily I have a backup set. 4 stars.
Update: I cleared out his desk today and found two spoons, three containers, a lid, and the core of the asian pear from Halloween's lunch. Eeew! We had a little talk about proper post-lunch hygiene.

  1. oh man. almond butter: one of my biggest weaknesses. I searched for those corn thins- they don't seem to carry them anywhere here in Texas! ah well, I will try some of these little sandwiches on regular rice cakes. there are endless options as far as combinations go. all those nut butters and fruit preserves, yum! ah, poor schmoo, forgetting his containers.

    I enjoy your site. Im still learning, and this is very helpful for me. One thing I have been doing is printing out these comics from http://www.sanrio.com/main/happytimes/comics/archive.html . I cut the strips out and keep them in a envelope, so when Im done making lunch I wrap one up with there spoon. Similar to what you do. I always call home to ask If they liked there lunch.

    I am a regular reader of your blog. I am actually not vegan or even vegetarian, but my daughter has food allergies to dairy, egg, soy, peanuts, nuts, and fish. I enjoy getting ideas from your site that are safe for her to eat.
    The biggest trial for me is that many alternatives for her allergies are made out of soy, which she can't have. I love it when I see stuff on here that doesn't involve soy either! Keep up the good work!

    you totally rule...just thought you should know. please move to virginia & feed my kids! although we are not vegan, i can certainly appreciate the animal-free meals you've created! i applaud you for your endless creativity & raising your child to be conscientious (sp) of animal rights as well! kudos to you! you are an inspiration.

    Well, some I'm non-vegan and found the site because it went out in the e-newsletter sent by the laptop lunch folks! Even when I talked to them on the phone a few days ago concerning my order, they mentioned the wonderful ideas Jennifer has in her blog!

    Leslie - I found it because my daughter's allergies force a semi-vegan lifestyle on us. I am always researching recipes and whatnot that my daughter can have. I just stumbled across this blog in the process!

    Jennifer,

    I was wondering since it sounds as if Little Schmoo eats his lunch at his desk as opposed to eating communal at a table (i.e. lunch room) does this make it easier for him to bring such a variety?

    I have two children ages 12 and 8 (vegan since birth) who have to eat lunch in the typical public school environment. And unfortunately because of this I know that they are conscious of what is inside their lunchbox.

  17. Hi, carin! The kids eat at their desks, but I've noticed there is still a lot of checking each other's lunches out and making comments. I think it probably is better than the regular public school environment. Plus the fact that they don't have hot lunch makes the job a lot easier.
