Phyllo Bundles

Crispy phyllo bundles filled with tofu "feta" made with fresh dill and lemon juice; a lemon soy yogurt topped with fresh blueberries; some gigantes plakis (Greek "giant beans"); and some chopped cucumber, tomato, and kalamata olives. Little shmoo also wanted to show all of you his latest Lego creation, which he is calling "The Fire Vulture".
Verdict: Shmoo devoured the crunchy phyllo bundles, yogurt, and the beans, but he wouldn't touch the salad because of the tomatoes. Even so, I must say we've made a lot of progress with tomatoes lately -- it used to be even ketchup was verboten. Now he likes ketchup, tomato sauce, tomato soup, and sweet grape tomatoes. 3 stars.

  1. Jennifer,

Congrats on the bloggie nom! Very exciting.

I have two things to share with you!

    1. You, and the Post Punk Kitchen, have inspired me to try tofu again, and again, and again. It took me a long time to like it, but now that I'm comfortable preparing it, I love it! Thanks!

    2. I had a child pick every ounce of "crust" off of his banana bread that we had for snack in the classroom this afternoon. Sheesh!

  2. Ha! I bet those crusts were the best part, too. I love the crust on banana bread.

  3. Hey there, I just voted for you. Your lunches have definitely inspired me to be more creative with my own. This one may just be my favorite so far. I love Greek food. Just wondering, did you make the feta, or can you buy vegan feta? I've never seen it at the store . . . Anyway, congratulations, and good luck!

  5. Hi, Sarchan -- I made the "feta" myself. I also like to add some steamed, chopped spinach to my phyllo bundles but left it out for the shmoo.

How do you make your own cheese? I've never heard of anyone doing this before.

I predict Shmoo's going to be a wonderful engineer, and you can tell him I said so.

I love lemon soy yogurt! Yum! And you added all that fruit -- double yum, and healthy.

There's a vegan feta recipe in either "How it all Vegan" or "Garden of Vegan."

Holy Web Awards Jennifer! Look at the difference one person (you!) has made?! Look at how this all has grown! And all you wanted to do was show what vegan eat! How exciting all of this is! Great lunch as always!
    Hey Shmoo~
Keep playing with those Leggos! You could be an engineer or a toy designer! How cool would that be?!

  16. Those gigantes plakis are one of the *best* beans we've ever had. Here's a site that sells them:

We keep talking about planting them, too (would they grow on giant bean stalks?), but we have no luck growing beans in our garden. They get 2 inches high and die, every time.

Another fantastic lunch, Jennifer! Thanks for sharing. I love the idea of the little phyllo bundles. For those of you looking for recipes for vegan feta, here's a link for some of Bryanna Clark Grogan's feta recipes (both tofu and almond varieties, along with variations for ricotta, queso fresco, etc):

Really, this blog is amazing! It made me wanna go vegan right now.
These boxes are so full of love. And you've got an amazing visual taste, too.
Unfortunately, I live in South America and all things vegan or organic are not of easy access here (or low price, neither), but you're really an inspiration.
