Crispy phyllo bundles filled with tofu "feta" made with fresh dill and lemon juice; a lemon soy yogurt topped with fresh blueberries; some gigantes plakis (Greek "giant beans"); and some chopped cucumber, tomato, and kalamata olives. Little shmoo also wanted to show all of you his latest Lego creation, which he is calling "The Fire Vulture".
Verdict: Shmoo devoured the crunchy phyllo bundles, yogurt, and the beans, but he wouldn't touch the salad because of the tomatoes. Even so, I must say we've made a lot of progress with tomatoes lately -- it used to be even ketchup was verboten. Now he likes ketchup, tomato sauce, tomato soup, and sweet grape tomatoes. 3 stars.

1. You, and the Post Punk Kitchen, have inspired me to try tofu again, and again, and again. It took me a long time to like it, but now that I'm comfortable preparing it, I love it! Thanks!
2. I had a child pick every ounce of "crust" off of his banana bread that we had for snack in the classroom this afternoon. Sheesh!
Ha! I bet those crusts were the best part, too. I love the crust on banana bread.

Just wondering, did you make the feta, or can you buy vegan feta? I've never seen it at the store . . . Anyway, congratulations, and good luck!

We keep talking about planting them, too (would they grow on giant bean stalks?), but we have no luck growing beans in our garden. They get 2 inches high and die, every time.
