We're heading out for a little summer vacation today, and I'm too excited to sleep! So here I am at 4am preparing a few healthy snacks to take along.
I've been working on creating healthy bars and cookies that shmoo will eat but that are also Eat To Live-friendly for me, meaning no white flour, sugar, oil, or salt.
Here are our two favorites so far: Fruit & Nut Bars made with spelt, oats, raisins, apricots, and walnuts, and Banana Oatmeal Cookies, made with oats, bananas, sunflower seeds, and dates.
We don't like to eat out more than once a day when we're on vacation (too many other things to see and do), so I'll be packing a big cooler with these cookies & bars, plus tons of fresh fruit, veggie sticks, hummus, sandwiches, crackers, juices, and a jar of almond butter.
We're off! I'll probably fall asleep as soon as we hit the road....

Have a great trip! Can't wait to try your E2L cookies. I've just picked up this book and am reading through it. I like how he says you can't do it half-assed. You have to fully make the commitment. And, obviously, he's right. I made the commitment to be vegan. Why oh why do I find it so hard to kick the other crap out of my diet?

ReplyDeleteI just came home this evening from a marvelous camping trip just outside of Santa Cruz, CA -- the mecca of veg*nism... Any one who is a veg*n should make a trip there someday...IMHO AW - had a blast -- especially savoring the much cooler temps from the blistering heat the rest of the state has been experiencing and taking in the beauty of nature and all of the tremendously delicious veg food! We started driving thru the night at about 2:30 a.m. so we could get thru the Central Valley to bypass the heat as we drove thru the state. We took the cooler, too, but we were blessed with the many fine natural foods stores, restaurants and farmers' markets with tons of organic produce in the area, so we didn't have to take too much. We had to make a trip to Dharma's and once to the Saturn Cafe. It's way too hot to prepare anything in an oven - much less prepare anything at all - so I had to be lazy and enjoy all of the yummy goodies at Staff of Life market in SC. My fave this time was the vanilla soy tapioca in the deli sweetened with chicory root syrup (inulin.) Fantastic and did not give me a sugar "bounce." Yum! Your road trip food sounds so delicious. If my car ever breaks down, I hope you and your cooler show up as the rescue unit! ;-)

ReplyDeleteNext month my boyfriend and I are setting off for 4 weeks in Bosnia, Serbia, and Croatia. Very exciting... but I have more than a little trepidation as far as being vegan. I'm a super committed vegan here at home, for many years... but I'm considering eating a little bit of dairy while I'm abroad. I'll bring some luna bars, and look for farmer's markets while we're there... but this is a place where the national dish is "lamb stuffed with lard"!!!!! I'd love to hear comments from other international-traveller vegans.

ReplyDeleteHi, Heather Lynn -- Do you mean the insulated carrying case with a handle? Yes, I always pack his lunch box in the case, usually along with an ice pack or frozen water bottle. It hasn't been too big for him to carry. He can also fit the whole carrying case into his backpack. Hope that helps!
Have you ever used Lorna Sass cookbooks? She is one of my favorite all time Vegan cooks (although she has nonveggie cookbooks as well). Her baked goods are the best I have ever had when it comes to vegan cooking. If you haven't, I would say check it out!
