See the wording on the left there, "Vegan gourmet / The perfect picnic"? That's me! I wrote that! I put together a vegan picnic menu for this month's Vegetarian Times magazine. The menu features a roasted red pepper spread sandwich with baked beans, a kid-friendly salad, and coconut cream pies for dessert. The staff at Vegetarian Times made and tasted each of the recipes and liked them all (whew!), and I love the pictures they took.
Originally my summer picnic menu also included an egg-free, mayo-free vegan potato salad, because what picnic or potluck is complete without potato salad? However, the editors felt that with the sandwiches and beans, the potatoes would make the menu "too starchy", so it got canned.
But you're in luck! I saved the recipe and am posting my Picnic Potato Salad here. Think of it as a free bonus recipe! Or think of it as the best darn vegan potato salad you'll ever eat. Either way.

ReplyDeleteI am wondering if I could pick some vegan brains out there or yours if you have a sec. I have a 6 month old baby boy and after having him, have not wanted to eat meat, we have had fish but, after reading engine 2 & Skinny Bitch my husband and I want to start a vegan life style.
I have been reading about vegan infants and would like to get more info from moms out there that have vegan babys and how they are doing. Is there any info you can give me on how to start him on this life style of food and what is good for a growing vegan baby.
We already are getting crap from people about this. we/me are trying to do are own thing it is just hard when you hear we are not going to be giving our baby what he needs to grow. I feel strong that vegan is the way to go and would love some input from other vegans. Just for my mind to calm down!!!

ReplyDeleteI recognized your name and skimmed your VT article, which looks good (as always) and the thing I can't get over is the picture of you in the front of the magazine! I'm so used to the one of you on this blog - and she does not look like she would have a tattoo under that sleeve! - that I kind of thought you had asked them to Photoshop you, for whatever reason. It's a whole new Jenniferschmoo! :)

ReplyDeleteKristin, there are lots of resources out there. I recommend getting as many books on nutrition as you can and really reading up. Not only will it help you do what's best for your baby, you'll also be prepared next time someone gives you crap.
ReplyDeleteSome books I would recommend are "Raising Vegetarian Children" by Jo Stepanaik, "Viva Le Vegan!" by Dreena Burton (she has this great list in the back on when to introduce new foods and how to prepare them for baby), and "Disease Proof Your Child" by Dr. Joel Fuhrman. I even think the Skinny Bitches just came out with one on pregnancy, but I'm not sure if that covers child nutrition, too.

Jennifer, I think the magazine editors were a little silly about the potato salad. Potato salad is picnic food! A non-vegan picnic will have the fried chicken or sandwiches, beans, potato salad, and then the cake and/or pie. I don't think I've ever seen a green salad at a picnic, though some smart person will usually bring some crudites. Picnics have a little built in excess, but you work it off swimming in the river or playing frisbee, or nature walking.
