I'm going to post pictures for the next few weeks to give everyone a taste of what the new bookis like!
Here is the photo we took for Kansas: Mini Veggie Burgers with french fries and ketchup. This is my favorite picture from the book.
The complete menu for the Kansas-inspired meal is: Mini Veggie Burgers on Mini Burger Buns, baked frozen french fries, Limeade Fruit Salad, and Oatmeal Cookies. The burgers are made from amaranth, lentils, carrots, and sunflower seeds, and are gluten- and soy-free.
I chose to make a veggie burger for the Kansas lunch because of a line from the children's book This Is the Way We Eat Our Lunch.In Kansas, it said
But the favorite lunch of Reggie'sLink: Vegan Lunch Box Around the World.
is a burger made of -- VEGGIES!
I love This Is the Way We Eat Our Lunch... it's one of my favorite children's books because it's about food!

Hi! I've been following your blog for a while, I can't wait for your new book! Those burgers look great!I love that they are soy free. My son has a soy allergy, and I am going to be packing lunches for the first year for him this fall. I can't wait to use your books for his lunches! :)
ReplyDeleteI've been wanting to send veggie burgers in my son's lunch -- but I haven't figured out how to keep them warm. I send all his other warm/hot food in a stainless steel thermos -- but I know that won't hold a burger (and he's not quite old enough to figure out how to put it all together if I send it in separate containers). Any thoughts?

I just looked through my Vegan Lunchbox cookbook last night and put bookmarks on every recipe I want to try soon...I eventually ended up bookmarking the whole book, practically! Haha. I love it! I hope I can buy your new cookbook...I have a huge wishlist of cookbooks and other vegan goodies. :)

Haha, that seems so ironic to me. I live in western Kansas and veggie burgers can be hard to come by! LOVE the photo, can't wait for the cookbook. :)

ReplyDeleteI don't try to keep the veggie burgers warm, I pack them cold and they're still yummy. Homemade burger patties are especially good cold; storebought frozen patties can get "rubbery".
I can see why this is your favorite. It sounds delicious too!
