Lemon Rice and Peas

Today I made Lemon Rice and Peas from May All Be Fed. Last night I had leftover cooked brown rice, so it only took a few minutes to toss it together with Indian spices, frozen peas, cashews, low-sodium tamari and fresh lemon juice. I also threw in some garbanzo beans I had in the fridge.

This morning I packed the cold rice and peas in my To Go Ware alongside an avocado wrapped in yellow Hello Kitty. I opened the avocado at lunchtime and mashed it with some balsamic vinegar for green salad.

On the side are an orange, a low-sodium V8 juice, and yet more Fruit & Nut Bars (in case I needed a snack later in the day).

Since I have access to a microwave, I transferred the rice and peas to a regular bowl and microwaved them at lunchtime. They were so good I didn't want to stop eating, but it was too much to finish!

Now that I'm away from home all day, I feel even more the importance of a healthy lunch packed with care and love. It's a little reminder of home, a little moment of caring for yourself in the middle of the day, and a chance to smile a bit to yourself at a cute lunch box or a Hello Kitty avocado. :-)

  3. Are you packing Shmoo his lunches too? (how silly, it rhymed!) I'm glad to see grown up vegan lunches portrayed in the blog, though! They give me great cooking ideas. :-)

    Absolutely! I work 20 hour shifts, and in the middle of the night and esp in the early AM, I am so tempted by the fat tasty steak fries and soft-serve ice cream in the cafeteria. Having a cute, well packed, good looking lunch box really helps me eat healthy.

    I pack mostly in the Mr Bento set or the Sistema lunch cube, and one of those plus a snack, plus a water bottle usually more than holds me overnight.

    I just made the fruit and nut bars (litterally just came out of the oven) and they are delicious! I tried such bars before, but did not like the texture. These hold perfectly and I love that the recipe doesn't call for PB. My son is not allowed to bring any nuts at school so I can easily make this a nut free version for his school snacks... how perfect! But will definately leave the nuts in for at home. Thanks for the recipe!

  11. I don't eat vegan, but I pack my lunch nearly every day. It tastes so much better than the cafeteria food, it's better for my weight and health, and as you noted, it's a reminder of home in the middle of the day. I open my containers to microwave, smile at them and think "I made this myself! I can't get THIS downstairs."
