Mini-Wellingtons

Some of you have indicated which lunch is your favorite, and I have to say this one is mine (I've always been a huge sucker for anything en croƻte). Beef Wellington is a traditional English dish made from a fillet of beef that has been wrapped in pastry and baked. Here, I transformed our favorite nut and bean loaf into miniature vegan Wellingtons. On the side are peas, an organic pear, and three raspberry wafer cookies. Oh, and I found these cute little "Lunch Packers" at a chichi local boutique; you write a personal note on the back and inside is a corny joke, brain teaser, or funny trivia.
Verdict: I was in class to help today, so he and I got to sit outside in the sunshine while he ate (this was extremely cool -- he was king in the classroom when he returned, and gave all the guys high fives as he walked back to his desk! lol). He ate the cookies first, then the peas, the pear, then the whole wellington minus one bite of symbolic crust that I got to eat. 5 stars.

Man, your little shmoo makes me laugh...I love that everything even remotely bread-like has to have some portion of it that is the "crust".

Thank you for providing such beautiful pictures and faboulous and healthy meal ideas...you inspire me to treat my body with more respect and quit filling it with fake crap.

I'm vegan and have been enjoying your blog. No kids, but I have a hubby, and I intend to start packing him lunches that are (almost) as wonderful as yours!

The wafer cookies are "Manner" brand, from Vienna. I found them at a gourmet food import store, and boy are they *nasty*. A sickly sweet, artificial raspberry taste only a kid could love. Not healthy, and not the kind of thing I would recommend. But when he saw them his eyes lit up. "Hey, Emily had those for lunch yesterday!" When I saw they were vegan I decided one small package wouldn't hurt, and now he knows wafer cookies aren't anything spectacular.

"Manner" hazelnut and "mignon" style wafers are actually decent. The lemon and raspberry taste awful!

Hi Jennifer. I'm a working mom of two kids. My husband and I use your recipes and tips often, I should have written long ago to thank you. The other night I took a few pictures before serving dinner and my husband said I should share one with you since some of your recipes were used. I made Sea Turtle Wellingtons (mmm trans fatty puff pastry - definitely a once in a while meal - but we are ever so grateful for the heads up about vegan pastry dough). I didn't score the hexagons hard enough this time, they usually stand out better. The turtles are swimming on sea grass (aka collard greens and sweet onions - Linda's Collard Greens). Mashed baby gold potatoes made the heads, roasted baby carrots with thyme for flippers, and a sage gravy to pour on top/dip in (I have a 3 year old dipper). My son (1st grade) took leftovers to school the next day, carefully holding his tin lunch box on its side to keep his turtle intact until lunch time. I thought you'd appreciate it! Thank you for inspiring me and my family to be creative with our food.
