Pumpkin Muffins

In honor of the pumpkin harvest, here is my recipe for Pumpkin Carob Chip Muffins.

I'll be posting a new recipe every two weeks or so. The old ones will come down when I put a new one on, so I can do more testing and tweaking before putting them in my cookbook-in-progress. So get them while you can, and please email me with any recipe feedback.

Yesterday someone asked me if Little shmoo ever came home asking for something he saw in someone else's lunch box. No. Last year in kindergarten he did ask for flourescent yogurt-in-a-tube (how gross is that?), but this year he's excited by his own lunches. On Friday he came into the kitchen while I was washing out his lunch containers and asked me, "What's for lunch on Monday?"

I am so excited to have found your blog! We use the Laptop Lunch lunchboxes. I agree that one of the smaller cups should have a lid. I don't like to send such large amounts of "wet" food and feel like space is wasted in the large container.

Though we're not vegan, your lunches have given me some great ideas for packing food for my kids. Thanks!

Hey, great blog! I love the pictures and how much fun you have with the food. I'll be showing the blog to all the kids I can find :)
I recently started a similar blog (what do vegans eat?) with pictures and descriptions of different vegan foods. I'd love to have you post a picture or two of your creations if you want, to spread the word further (anyone else is welcome to post too).

Your websites are fun and inspiring. Us vegans need more positive stuff like this around. It's so adorable - who wouldn't be able to appreciate this?! With all of the American children out there eating nothing but Mac N' Cheese from a box & overprocessed chicken McNuggets, I love to see that your son eats multitudes of veggies and a wonderful varieties of food. I myself do not have children, but people seemed shocked when I say that I will raise my future children vegan, as though they'll be missing out on something. This just goes to show that your little shmoo isn't missing out on anything - in fact, I'd say he's got better lunches than 99.9% of the first-grade population! I hope you don't mind, but I dedicated a blog entry to you in my own blog - Consistently Ridiculous. Again, what a great site and thanks for the smiles!

I just printed the pumpkin/carob muffin recipe. Can't wait to try it.

Since, I've stolen your idea, my kids have not made many requests either for lunch. They love that I keep it a secret and they find out at school what they're having. Thanks again for the inspiration.
