"No, don't eat that!"

Today's a noon release day ("What, another? Don't these kids ever go to school?" Yeah, I dunno.)

In the meantime, here's a fantastic podcast by Dr. Joel Fuhrman on getting kids to eat their vegetables. His cunning use of reverse-psychology is adorable.

I also appreciate and recommend his book Disease-Proof Your Child. Sadly, our diet is not nearly as healthy as Dr. Fuhrman's, mostly because I've never met a cookie I didn't like or a cake I didn't want to bake. But there are days when I watch my son chowing down on his second heaping plate of steamed broccoli, potatoes, peas, and carrots, and think, "Dr. Fuhrman would be proud!"

I feel the same way when I watch my son chow down on tofu and broccoli which are his two favorite foods. I get frustrated that my son won't eat certain vegetables, but then I remember that most American kids don't eat any vegetables other than french fries. Then I thank my lucky stars that my son is so awesome!

I am so glad I came across this blog! I struggle myself with eating healthfully and I try very hard to teach my children that healthy food is delicious food. My kids are 4 and 6 and I have a lot of work to do! I will admit, I choose organic whenever possible, my children prefer soymilk to regular milk, and neither one will go near a regular corndog (but my son requested a soy corndog for breakfast!), but I can do so much more! Thanks for so much inspiration!

I still remember the great fun of buying fresh corn in the summer, shucking the ears with my parents, etc. What does a vegan put on fresh corn instead of soaking them in butter and salt?

Duh, I thought I posted...I must have hit preview! I have lime cilantro Earth Balance on my corn (not sold in stores, just made in my house.)

My kids love veggies. I am quite lucky. I mean they get excited over Kale salad, broccoli and lima beans. My downfall is the baking. I looooove to bake. A large cake is lucky to last 2 days in this house.

I love fresh corn. I love fresh lemon juice instead of "butter" but once in a while I like E.B. too like the rest of you.

For a virtually fat-free spread you can make in a few minutes, go to Bryanna Clark's site on vegsource.com . She has a recipe made from cornmeal ( I know, sounds strange ) that I make and my kids, 10, 9 and 5 love it. I don't feel guilty making garlic bread or corn with lots of this "butter."

When an American kid says he won't eat vegetables, sometimes it's the fussiness of the kid that's to blame, but a lot of times it may be the way vegetables are prepared. Soggy frozen broccoli smothered with Velveeta... Who could blame them?

Anyway, your kid is lucky he's got a mom who knows how to prepare veggies so they taste (and look) great! Keep up the good work!

sdgvegan, I love to bake, too! I listened to the podcast and, while I think he's completely right that if there are nothing but healthy foods in the house, that's what kids will eat, I'd really struggle _not_ to make cookies or cakes every so often.

About corn, I love it with a squeeze of lime juice and a sprinkling of spicy seasoning (cayenne, chipotle chili powder, etc.) The lime helps the seasoning to stick, and it's completely fat-free. And delicious!
