Another Monday, another lunch box!
My friend Linda shared this lunch idea with me. It's a menu that got five stars from her own little shmoo-ette: Nacho Cheese Dip made with nutritional yeast and pimentos, packed in a thermos with corn chips for dipping and a tortilla wrap filled with veggie chicken strips. I followed her lead but filled shmoo's whole wheat wrap with his favorite refried beans instead.
On the side are baby carrots, garden-fresh tomatoes, and some apple slices with Aztec-inspired designs carved into the skin (we've been studying Mesoamerica this week).
Verdict: This was by far the best nacho cheese we've ever had (including those made with dairy cheese!), and one of the best uncheeses I've ever tasted. If we find out where her friend got the original recipe, I'll be linking to it here (UPDATE: follow the link on "Nacho Cheese Dip" above to go to the recipe and read about its origins). Shmoo was raving about this lunch! 5 stars. Thanks, Linda!

landsakes, i hope you find out soon! yum!
What a great idea for lunch! I'm interested to see the recipe; I'm sure there is plenty of room to spice it up for more adult palates.
It's so good to see new things here no matter what they are, but this looks particularly good!

Nacho nacho man...
Oh my stomach is growling!
Just wanted to say I love your recipes! The photos really inspire me. I hope your book has lots of photos because well I don't think I could follow a recipe without first seeing how delicious it looks. Thanks!
Gorgeous! This lunch and the bento lunch before it show your supernatural talent and patience! When I'm trying to make little things look good, I usually give up in frustration. I've said it before and I'll say it again: Shmoo is so so lucky to have you.
I want the recipe! Oh! When is your book coming out? jw. LOVE the updates!
Your schmoo is so lucky to have such a cool mom that makes such awesome lunches.
nacho cheese recipe? maybe, just maybe?

Actually, I found this site with a lot of "cheese" recipes and there is one with pimentos and nutritional yeast that can probably be played with to create nacho cheese...experimenting this weekend.
Great lunch! Love the apple design idea. It makes eating fun. I'm adding my request to the ever-growing list of nacho cheese recipe requests.
Looks delicious!
You can now follow the link on "Nacho Cheese Dip" and get to the recipe! The book it is adapted from -- "Something to Shout About" -- is not widely available, but I did find it for sale on a Seventh Day Adventist website. It sounds interesting.
I just wanted to say that I love the apple designs. What a great way to jazz up an apple!
And another 'cheese' recipe for me to try too - thanks!

Jennifer is the tutorial for the Lunchbox napkins still going to be in the cookbook? I can hardly wait to get my hands on a copy!

Hey! I've been reading this blog for almost a year now. I just wanted to thank you and let you know that your blog was one of the major reasons I've begun to eat so much healthier! Your ideas really make becoming a healthy vegan fun.
