Summer Refrigerator

Yes, I'm still alive! Not blogging, but working, single parenting, dating, selling my house, and now moving to a new house. If life gets any busier I'm going to have to clone myself.

Today I cleaned out my refrigerator and did a grocery store run (I was out of town this weekend and missed the farmer's market). It's looking so pretty, kid-friendly, and well-stocked I thought I would take a picture.

Apples, watermelon slices and veggie sticks (jicama, baby carrots, and celery) are ready to grab and snack on, along with coconut yogurts, applesauce cups, and dried apricots. My son is a big fan of the new So Delicious Coconut Milk; it's all he drinks at home nowadays. The chocolate soymilk boxes are for his morning snack at summer school.

A big bowl of salad is behind the veggie sticks, and right now I'm cooking brown rice and edamame to add to this easy-grab snack fridge.

It's from Bed Bath and Beyond. I got it a couple summers ago to encourage veggies as a quick snack during the summer. In fact I talked about it way back when in this blog post:

I'm glad you're back!! And it looks like you're really busy. The first thing I noticed about that photo was the container. Which reminds me I need to buy it and use it for summer snacks for the boys! I hope you blog again once in a while.

Oh, and about that coconut milk, it's amazingly DELICIOUS, too bad we (a family of four) really cannot afford it at over $4 a carton. :-(

OOoh, I see you have many of the same delicious goodies in your fridge as I have in mine: Watermelon, apricots, coconut Water and So Delicious coconut milk yogurt! And is that Vega hiding behind the PJ? How long do you think your fridge will stay so organized? I think mine would look like that for exactly 5 minutes.

It's not Vega, it's hemp protein powder. And the watermelon and most of the veggies were gone by dinnertime!

If you are trying to not use plastic bags, try baby food jars! I love organizing my pantry in mason jars, and storing the oatmeal mixes in baby food jars goes right with the theme. This makes it so my kids can grab a jar, add the right amount of water, and be good to go on their own. Its a great, healthy snack

I second the comment about using glass jars instead of plastic. Last year I got rid of all the plastic food containers and replaced them with glass. Plastic leaches into food which is very unhealthy, and so it should never come into contact with food. Unfortunately that is the way so much of our foods comes to us, though! :(

It still looks pretty much the same, except one bin now holds frozen chopped spinach to add to the smoothies. I have a bigger freezer downstairs to hold more bulk packages of frozen fruits and veggies, all my flours and grains, etc.

The law of entropy says that something else in your house must be a mess- guess its not your freezer.. I am envious!

Whenever I try to organize my stuff, they just get back to being messy within a couple of days.

Maybe you should go into the organizing business. :)

Thanks for the post! I recently started making smoothies again and remembered your previous post on smoothies, tried to find it but to no avail. I am interested in getting the storage bins for my frozen fruit. Can you provide a bit more info re: those, make, etc. Trying to find them online but not sure what terms to use for search. Thanks!

I got them at a local restaurant supply store -- they are the same kind used in restaurants. I'm not sure what they are called.

Looks yummy, aside from all the plastic! I always debate precutting my veggies, since a lot of nutrients get lost that way? I understand it being more convenient for the kiddos though!

I was inspired by the veggie storage, too -- but it's polycarbonate, which isn't one of the 'safe' plastics. Glass storage containers would be a better choice! I'm off to the store to get some now.

I am completely jealous of your fridge! LOVE the idea of the pre-sliced veggies. I always read about jicama, but have never tried it with my boys. We will have to get some!

Hi! Just found your blog after someone's comment on facebook. Your fridge looks amazing! But, I felt compelled, I hope not offensively so, to share that you might want to re-think your pineapple juice container. I could be wrong here, but I have always been told, and many many food cans will also state, to NOT put them into the fridge to store them; to remove the food into a different container to refrigerate. Since your choices are all obviously very thoughtful and you have taken great care, I decided to share and maybe you can check the can to see if it indicates anything or do some research of your own about it.

The pineapple juice was actually not opened yet -- I was prechilling it. Once I open a can like that I always pour any leftover juice into another container to store in the fridge.
