Erin Pavlina from VegFamily sent me a copy of her new cookbook, Vegan Family Favorites. Thanks, Erin! I've added a link to her book on the sidebar. We've been enjoying her fast, easy, kid-friendly recipes. Last night I made the recipe for Tofu Pot Pie and set aside some pastry and filling to make this lunch-sized pot pie in a mini loaf pan. I refrigerated it overnight then baked it this morning and wrapped it in foil. I sent it with an organic apple and some chocolate graham crackers filled with chocolate ganache. Beverage: fortified vanilla almond milk.
Verdict: I added some frozen corn to the peas, carrots, and tofu in the pie crust. The sage gravy was easy to make and quite yummy. Little shmoo especially appreciated the fact that this recipe contained no onions! 5 stars.
Mmmm. Pot pie. I need to make some of this. Lunch is off ot a grand start what with yesterday and today. :)
ReplyDeleteI have a picky 7 year old vegan as well. He "hates" onions and I love them. TIt's such a battle to see how tiny I can chop them. I will have to try the chocolate ganache cracker thing. We love our ganache around here.

ReplyDeleteI hate onions and I'm almost 25. I do like onion flavor, a lot, but not the texture... prepared any way. So I just cook with huge onions and pick them out later. Or bouquet-garnet them. If they are diced super-small I'll eat them too, but I agree with Shmoo.
ReplyDeleteWow, Jennifer, after reading the many many comments on the tamale lunch it struck me -- and surely struck you -- how much your community has grown in such as short time! OK, what is next? The minute your book is finished we need t-shirts, canvas shopping bags, branded lunchboxes that have "Vegan Lunch Box" on them? I think all of your readers who visited before the holidays told at least 10 people about your site -- I know we did!

ReplyDeleteI am so glad you're back!!! I have been an obsessive vegan lunch boxer since october, and for the first time in my life I'm not looking forward to summer vacation! You must think of some other way to incorporate your lunches into summer life. I would suggest summer school, but I don't want little schmoo to hate me. I have the vegan family favorites cookbook as well; so much good stuff in there, the tofu pot pie is already my husband's favorite, but what a great idea to make it into little personal servings! You are a genius! Looking forward to your cookbook.

I keep meaning to ask, do you use a lemon squeeze to keep the fruit from browning? I know one is supposed to, but I've never tried it because I'm afraid it would radically alter the taste of the fruit. I mean, I love lemon, but I don't know if I'd love lemonapple.
ReplyDeleteI usually use orange juice, as it doesn't make the apple taste sour like lemon does. Citrus soda works, too, if you happen to have it around.

ReplyDeleteI hated onions as a child as well. But, my sneaky mother never told me that my favorite dish of all time was heavily laden with onions. She simply pureed them in a blender and then used the juice - voila, all taste and no texture. :)

ReplyDeleteWow, an AP Environmental Science class -- that is so amazing! I almost majored in Environmental Science when I went to college, but chose Anthropology instead. Much more useful careerwise, you know (ha!).
