Around the World: Thailand

I love Thai food so much, I couldn't settle on just one Thai menu for the new book! Pictured here are my two menus inspired by Thailand: (counter-clockwise from front left) Pad Thai with sliced Asian pear, Red Curry Vegetables, and Cucumber Salad; Lime and Thai Basil Salad, Thai Iced Tea, and Mango Noodles.

Both of the main dishes are made with gluten-free rice noodles that have been cooked, drained and stir-fried. The Pad Thai is a quick and easy dish made with the help of a storebought mix. The Mango Noodles take a little more time but are one of my favorite dishes from the cookbook: noodles seasoned with soy sauce, lime juice, ginger, garlic, and sesame oil, fried tofu, sweet pepper strips, snow peas, baby corn, and fresh ripe mango. They have a wonderfully complex sweet-sour-savory taste.

i love Thai iced tea.

but i've never been able to find a satisfactory recipe, so my question is... is the recipe come down to "buy Thai iced tea mix, then make it with vegan cream" or do you actually give a recipe with spices and stuff?

Do your cookbooks include nutritional information for the recipes?

No, unfortunately it's too expensive to hire a company to produce all the nutritional information, and we wanted to keep the cost low. But I can guarantee that these are darn healthy recipes! I've learned a lot about plant-based nutrient-dense eating since I wrote my first book, and the recipes really reflect that. There are a lot more veggies, less salt and fat, and fewer calorie-rich desserts in this cookbook.

Abigail, Thai tea is a blend of tea leaves with anise, cinnamon, and vanilla. If you really want to make it from scratch you could always experiment with different varieties of tea and quantities of spices until you find one you like.

But yes, I kept it simple and used storebought Thai tea. You can buy Thai tea at an import market or online, then it's just a matter of brewing it just so, then adding sugar and half-and-half or cream (soy cream or coconut milk, in this case).

I love this lunch box! I just got back from two months in Thailand where I was absolutely in vegetarian paradise. I miss the delicious fruit you could buy on every street...practically no need to eat anything else, but when I ventured out for regular food, I could get everything vegan because some sects of Buddhism don't eat animal products. It was fantastic.
