Pizza


Here's a picture of the four mini pizzas I've made to include in the cookbook (clockwise from top): Mixed Mushroom, Polka-Dot Pepperoni, Kale Kalamata (my favorite!), and Zucchini Lattice. Guess which one my son wanted for lunch...
Pepperoni, of course! I measured the inside of the lunchbox to make sure the pizzas would fit just right -- too cute! I've never sent shmoo to school with a soda before but a fruit-sweetened spritzer seemed just right with pizza. I tucked an organic pear in his backpack wrapped in a napkin, too.
Verdict: He even ate the crusts! And hubby and I ate our crusts, too, when we enjoyed the rest for lunch. 5 stars.

Do you put things like pizza or macaroni in the lunchbox hot or cold? You seem to have quite a few lunches which look like they should be eaten warm. Do they stay warm until lunch, or does he like them cold anyway.

I have these lunchboxes for my kids and also a thermos which I use for hot things. However one of my daughters cannot remember to eat from the thermos and it always comes home full. I am wondering about putting the warm things in the lunchbox anyway, but she says she doesn't want to eat them cold. I am just wondering how this works for you.

Hi, bagwasher -- I make things in the morning then put them inside the lunchbox inside the insulated case. By the time lunch comes around they are no longer hot, but he doesn't mind eating them at room temp.

If something really needs to be hot, like soup, I put it in the thermos. I put a note in his lunch box that says "Don't forget your thermos!" to help remind him it's there. You might give that a try.

I use the laptop lunches for my non-vegan kids, too. I never send anything that has to be eaten warm.
For bagwasher: when I send "pizza" for my kids, I send it "Lunchable" style. I toast a whole wheat English muffin and wrap it in a plastic baggie outside the lunchbox. I put pizza sauce in the lidded container and mozzarella and pepperoni in one of the smaller containers. I include a frozen applesauce cup (the individuals freeze great and are a perfect fit!) and put celery and carrots in the large container. They can assemble the "pizzas" themselves and don't mind eating it cold.

What kind of cheeze or cheeze sauce did you use on the pepperoni pizza? They all look delicious, especially the one with the pine nuts.

I really want to know about the "cheese" too. My daughter is allergic to dairy, egg, and soy so I follow your blog faithfully for ideas for her! I love the things I see and can't wait for a cookbook. I love that you cook "kid friendly".

Hi, jamie -- I *wish* I shopped at Whole Foods, but there isn't one in my area. I do most of my shopping at Fred Meyer's grocery store and a locally owned health food store.

Hi, kourtney & anon -- it was Tofutti American cheese slices. They do have soy, I'm afraid, but I am making a list of which of the recipes are allergen-free for my cookbook. All are free of egg and dairy, of course, and a lot are soy-free, too. :-)

I will definitely be letting everyone know when the cookbook is going to be available. Right now I'm still writing it, so it's hard to say. Thank you for your kind words re. the photos! My husband the amateur photographer is stepping in and helping with some of the lunch pics we hope to put in the book.

Hey Bagwasher~

The Japanese often eat foods tepid that Americans think should be served warm. To that end I got a book (Bento Boxes: Japanese Meals on the Go by Noami Kijima). I ususally cook and pack the meals at night then my daughter warms them in the microwave and packs them in the insulated case. She says that most of the time her food is still warm when she eats it (she heats her food at about 8am and doesn't eat luch til 1p)

I wish my parents had helped us make more educated food choices when we were in school. Now I take my lunch to work with me and there are tons of great ideas here!

You should seriously have your own show on the Food Network - it would have a cult following from both omnis and veg*ns, I think. :) The options are endless! Also, it's so cool of you to continue keeping up with this blog even as your creating your cookbook. I, for one, appreciate the effort.

WOW.....I wish my mum did that for me! Those lunches look SERIOUSLY tasty! I am the only vegan in my family (grrr) and my family call me their 'lone vegan.' I tend to eat bananas and sesame snaps for lunch. You should go all over and spread the word about the benefit of a vegan diet, and let the kids and parents do taste tests. I bet there would be some converts!
