Bagel

A wholegrain bagel with vegan cream cheese, lightly blanched french green beans and carrots in a tarragon vinaigrette, two nut & seed butter cookies, and some organic red grapes.
Verdict: Very quick and easy. Little shmoo said a whole bagel would be too much, but now says a whole bagel will be fine for next time. I wish the nut butter cookies weren't so good -- I'm eating too many! 3 stars.

Hi! Its Monica (vegan_redux) from the Freak Forums. I love your blog! I have decided to buy one of these lunch boxes for my son and he can't wait for it to arrive. Your wonderful ideas will make going vegan (at least part-time) much easier for him. Thank you, thank you!

Oh and I love todays entry. It is nice to see some less complicated things to prepare for us moms who work out side the home.

Keep it up,
Monica

just wondering, where do you buy all of your vegan cookies/snacks?

Hi, anonymous! I buy most of our cookies and snacks in the health food department of our local Fred Meyer grocery store. That's where I get all our Newman-O's and soy yogurts and rice candy. I buy aplets & cotlets and Sharkies at REI. Oh, and I recently found vegan Swedish gingersnaps at a hoity-toity gourmet import store. You never know where you might run into vegan goodies.

Jennifer your site is excellent. Just found it and already added it to my favourites to check daily. Your son is one lucky little lad :)

I saw somewhere that you intend to write a cookery book, please do, the more vegan cook books out there the better, and the one vegan lunch box cookbook there is, is not very good (to be honest it's awful), and one with fotos will be excellent, and even better already kid tested !

"A question - do you think the laptop lunch kits would work for an adult or are the pieces really kid-sized?"

I'm 24, and I've got one that I take to my office most days. It looks small, but it holds a decent amount of food if you pack it well.

Yeah. I have a hell of a time finding vegan snacks! Actually,,,I can't at all. Might have to start getting them online.

Hi, Jennifer! Yes, I think Laptop Lunches would work well for an adult, too. On most days I only fill the containers about half full because he can't eat that much, so there is definitely room to pack in more. If you get a thermos on the side for soups and stews, you'll have plenty to eat. :-)
